Nutella® Macadamia Banana Bread

There is no doubt that banana bread is the go-to breakfast snacks of many Australians but adding macadamias gives this recipe an extra Aussie touch.

Nutella® Macadamia Banana Bread

INGREDIENTS for 10 servings (1 loaf or 10 slices)

  • 3 small bananas -over ripe bananas are always best (one is for the top)

  • 1 cup of Australian macadamias, (plus 1 extra tbs for serving)

  • 140g unsalted butter - plus a tbs for brushing.

  • 1 egg 225g

  • 1 1⁄2 cups of sifted plain flour 110g

  • 1⁄2 cup caster sugar

  • 3⁄4 teaspoon of baking powder

  • 80mls – 1⁄3 cup of buttermilk

  • 1⁄2 teaspoon vanilla extract

  • 150g of Nutella®

To prepare this delicious recipe, 15g of Nutella® per person is enough to enjoy!

METHOD

  1. Preheat the oven to 180c fan force then grease or line a loaf tin.

  2. Roughly chop your macadamias, set aside a quarter of them for the top.

  3. Using an electric mixer, beat the caster sugar and butter together until light and fluffy. Add the egg and beat well. Next fold in your flour, baking powder, chopped macadamias, buttermilk and vanilla. Lastly fold in the mashed banana pieces carefully, make sure you don’t mash it too much.

  4. Once you have prepared your tin with baking paper or butter, spoon the batter in evenly. Then top with one banana sliced down the centre and your chopped macadamias. Brush with melted butter.

  5. Bake 30 minutes covered in foil then a further 15 minutes uncovered or until golden. Leave to cool slightly before turning out. Serve warm, spread with 15g of Nutella® per slice.
