Nutella® "Pannekoek" Cake
INGREDIENTS For 10 Serves

200g All-Purpose Flour (sifted)

2 Tablespoons Sugar

250ml Milk
-
200ml Water
-
2 Eggs
-
1 teaspoon Vanilla Essence
-
1 Tablespoon Melted Butter or Oil
-
½ teaspoon Salt
-
120g Nutella®
-
220g Plain Yoghurt
-
4 Ripe Bananas
-
Fresh seasonal berries & mint to top
To prepare this delicious recipe, 15g of Nutella® per person is enough to enjoy!
METHOD

In a large mixing bowl combine the dry ingredients (Flour, Sugar and Salt)

In a second bowl or jug mix the eggs, milk, water and vanilla thoroughly with a whisk until well combined.

Make a well in the center of the dry ingredients, and slowing pour in the whisked wet ingredients, whisk or use a handheld beater to mix until you get a smooth silky runny batter.

Get a non-stick pan or skillet onto the stove at a medium to high heat.

Pour just enough pancake batter into the pan, tilt the pan to cover the base with batter and filly in any gaps.

After about 45 seconds to a minute the pancake should have cooked through and loosened around the edges, enough to get a spatula under it and flip it over to cook the other side. Cook for a further 30 seconds on the other side, tip it out onto a plate and repeat until all of the batter is finished.

Slice the bananas, and start the layering process.

Layer the pancakes with a tablespoon of Nutella® , and sliced banana, top with a pancake smear a thin layer of mascarpone, top with a pancake, repeat the Nutella® and banana layer, top with a pancake and continue alternating layers until you reach the end of the pancakes (approximately 15)

Drizzle with Nutella® and top with fresh berries and mint.
