Almond Shortbread Cookies with Nutella®
Melt-in-your-mouth Holiday cookies
Embrace the flavours of the festive season with these delicious almond shortbread cookies decorated with a touch of creamy Nutella®. Simple to make yet bursting with buttery, nutty goodness, they're the perfect Holiday treat to share with loved ones (or keep all to yourself!).
INGREDIENTS for 30 servings

3 cups pastry flour

1/2 cup confectioners’ sugar

1/2 cup almond flour

1 tsp fine salt

1 cup cold butter, cut into cubes

1/2 cup Nutella® hazelnut spread

Sugar pearls, for decorating
HOW TO MAKE ALMOND SHORTBREAD

STEP 1
In a large bowl, sift together the flour and confectioners’ sugar, then add the almond flour and salt. Using a pastry cutter or your fingers, mix in the cubed butter until just combined (do not overmix!).

On sheet of parchment paper, roll out the dough into 1/2-inch thickness. Cover with plastic wrap and refrigerate for 2 hours.

Preheat oven to 180°C (350°F). Using Holiday cookie cutters, cut out the desired shapes of your biscuits from the refrigerated dough. Place the dough shapes on a baking sheet lined with parchment paper about 1 inch apart. Bake on the centre rack of the oven until the cookies are golden brown (about 15 minutes).

Remove the cookies from the oven and let them completely cool on the baking tray. Once cooled, use a piping bag to decorate each cookie with 5g (1 tsp) of Nutella® and sprinkle with sugar pearls.
